Thai Chicken Salad with Quinoa and Peanut Dressing
Ingredients:
Dressing-
1/4 C Peanut Butter
2 TBSP Rice Vinegar
2 TBSP Soy Sauce (or Teriyaki sauce)
2 TBSP Vegetabel Oil
Squeeze Lime (or Orange)
Garlic Salt
Ground ginger
Red Pepper Flakes
Quinoa (same Quinoa from Chicken Salad Recipe)-
1 C Quinoa
2 C chicken broth
Add to sauce pan and bring to boil. Reduce heat to low boil for 15-20 min until liquid is absorbed
Add:
1TBSP Curry Powder
1/2 C Raisins
Salad:
Lettuce (or Cabbage)
Sliced Carrots
Sliced Cucumbers
Sliced Red Peppers
Shelled Edemmame
Grilled Chicken Breast (on the grill!) Sliced
Lay the bed of lettuce first then layer the veggies, chicken and quinoa in rows
Top with Peanut Dressing, cilantro and green onion (optional)
So. Good. And really filling!
