Easy Caramel Corn
Ingredients:
2 bags microwave popcorn (or one batch Airpopped... add the butter and salt as usual,of course)
1 C brown sugar
1/2 C butter
1/4 C light corn syrup
1/2 tsp salt
1/2 tsp baking soda
M&Ms or Chocolate Chips
Directions:
Prepare Popcorn, put in a bowl and shake it so the kernels fall to the bottom (not good to have kernels in caramel corn)
In a large soup pot, heat brown sugar, butter, corn syrup and salt over medium heat. Stir occasionally to get the butter melted.
Once brown sugar mixture starts to form big bubbles, start timer for 5 MINUTES and DO NOT STIR, just let boil.
remove from heat and stir in baking soda, it will foam up. It's supposed to.
Stir handfuls of popcorn gently into the caramel, don't pour the whole batch in.... remember the kernels.
add chocolate.
dump onto greased aluminum foil or wax paper to dry and separate.
